Mark Wright Instagram – TACO TUESDAY 🌮🌮Genuinely one of the best things I’ve made in a long time! Shrimp tacos with slaw, pickled onions and avo. Unreal!

For the slaw: 
3/4 Cup Greek Yogurt
1/4 Cup Light Sour Cream 
3 Tbsp coriander
1 minced garlic clove 
2 Limes juiced 
Tbsp Water
Large pinch of salt 
3 Cups Cabbage

For the Pickled Onions:
1 Thin Sliced Red Onion
1 Cup White Vinegar 
1 Cup Water
2 Tbsp Sugar = 2
tsp Salt

For the Tacos (makes 6-8) 
600g Large prawns, peeled and deveined 1+1/2 tsp Chili Powder
1+1/2 tsp Cumin 
1/2 tsp Garlic Powder 
1 tsp Salt 
1 tsp Olive Oil 
6-8 Flour Tortillas 
1 Avocado, sliced 
1/2 Jalapeño, diced

1. �First make your pickled onions: Place onions in a heat safe bowl (or jar) and set aside. Then add the vinegar, water, sugar, and salt to a small pot and bring to a simmer. Stir till the sugar and salt dissolves then pour the liquid over the onions and let sit at room temp while you prep the other ingredients (or if you can wait an hour that’s best!)
2. Mix together all the ingredients for the sauce and set aside. 
3. �Season the prawns with chili powder, cumin, garlic powder and salt. 
4. Heat 1 tsp olive oil in a pan then add the prawns and cook 3-4 mins until opaque and cooked through. 
5. ��Heat up your tortillas in a hot pan for ~30 sec per side; top each tortilla with some slaw, prawns, pickled onions, jalapeño, avocado and you’re done.
