Matthew Pritchard Instagram – Smokey BBQ jackfruit & slaw buns
There’s nothing like using the fresh stuff but like I said in the video it’s expensive. Last time I used fresh jackfruit was with Laura @tidykitchenco while filming Dirty Vegan. If I remember correctly it cost £60 😳.
While prepping it fresh it’s advisable to use gloves as the latex that comes out of it sticks to your fingers and hands and it’s almost impossible to get off. I know because it happened to me. The younger jackfruit has more of a savoury taste which is good for this kind of recipe replicating pulled meat but the older jackfruit is sweet and tastes like a mixture of mango, pineapple and banana.
This recipe is is great for a Friday night with a side off chip shop chipieeeeeeees
