My favourite ice cream to make at home is my no churn, dairy free Jerte Valley Picota cherry & dark chocolate ice cream. It’s so quick & easy the kids can get involved too!

🍒Jerte Valley Picota Cherry & chocolate Ice Cream🍒
• 110 grams soaked cashews
• 400ml coconut milk
• 150g Picota cherries
• 1.5 tbsp vanilla paste or extract
• 2.5 tbsp agave syrup
• Pinch salt
• 25g dark chocolate
* Soak the cashews for a minimum of 20 minutes in boiled water.
* pre-heat your oven to 200°
* For the ice cream base, put all the ingredients apart from the cherries & chocolate into a blender until smooth.
* Pour into an ice cube tray and freeze for 1-2 hours.
* While the ingredients are freezing, bake the cherries for around half an hour, or until soft, and juicy.
* allow to cool, then remove the stones and chop.
* Roughly chop the chocolate into chips.
* Once the ice cream mix is firm, put back into the blender for extra creaminess.
* For a chunky finish, combine the chopped cherries and chocolate (setting some aside for topping) after blending, and transfer to a tray.
* freeze for 1 more hour and there you have easy, dairy free Picota cherry ice cream perfect for summer!
* serve topped with picota cherries and dark chocolate shavings.
