Matt Preston Instagram - Dinner at @farmlore.in . What a gem of a place with locavorism at its core at this farm and mango plantation. Clean, fresh flavours of nasturtium, local pomelo and scallop. Or a pea custard with saffron corn broth. Or the richest cream from the farm in that cornet with Indian basil flowers. Dried fire ants from the plantation that have the tang of green mango, a sorbet made from a prized local fruit similar to a plum, and that duck skewer with that intensely satin-rich sauce marbled with kokum. Note my occasional moments of introspection at this whisky like distillation of palm flower juice. PS we also searched for the best banana I ever tasted at the old Dutch Fruit Market - and did much frog-kissing before I found was reacquainted with my perfect banana prince!! It’s worth coming to Sri Lanka for the bananas alone!

Matt Preston Instagram - The journey through back streets of Bengaluru is part of the adventure of eating at @kckfoods Kappa Chakka Kandhari . @chefregimathew polished-up, toddy shop take is full of highlights like the pomfret fish under an amla (Indian gooseberry) and pepper paste, the homely rice flour pidi with chicken curry, the lightest Ramassery idli, the three prawn and coconut dishes (dry fry, in banana leaf and as a moilee with appams), the breadfruit and those two desserts. The white “cloud pudding” and the filter coffee pudim are both crazy-light and jiggly.

Demoed my new two-ingredient BB ice cream (bananas and Baileys) garnished with red gum smoked @olssonssalt and ChociChoci (if you know you know) AND my instant ice cream slice that’s a homage to the Cherry Ripe; Australia’s favourite cherry and coconut chocolate bar created in Fitzroy, Melbourne in 1924. It has an @officialparleg and coconut base and two ingredient coco-chocolate topping. It’s jolly good but the elements can be served as a simpler sorbet. (Yes, that is @danszwarc on stage with me doing all the hard work!! What a trooper!)

Bought tuna landed that day from those boats and cut my the guy who helped catch it for a wonderful spicy dry braise but that dish of shallots, fried eggplant, little dried fish and chilli was a favourite - as was the toddy drawn from the tree that morning to finish… 2025 dates out soon. #srilanka #homecooking #foodadventure
Matt Preston Instagram - Counting down the hours until Gary and my curated luxury culinary tour to India’s Golden Triangle (Delhi, Agra, Jaipur) goes on sale thru @luxury.escapes tomorrow at 9am. What better way to do this than with simple tandoor-inspired chicken skewers cooked in the airfryer for @natalie_barr7 and @mattshirvo on Sunrise. If you come on the tour with us you’ll eat even better! Register via the link in bio now if your are interested in going. To make my tangy spiced “red chook sticks” at home here’s the recipe. Mix cup of Greek yoghurt with six crushed cloves of finely chopped garlic, 2tbsp of minced ginger, 1/4 cup of good tandoori paste, 2tbsp of tamarind paste, 2tsp of smoked paprika, 2tsp of Kashmiri chilli powder and 2tsp of dried fenugreek leaves (kasuri methi). Add 1kg of chook thighs cut into large chunks, stir to coat and marinate for at least 30 minutes. Skewer and cook in the pre-heated airfryer at top temp / 200c for 10mins. Or in the oven or under the grill until cooked thru and a little burnt in places. Serving with sliced onion, coriander chutney, salad and Indian style flatbread of your choosing.

Matt Preston Instagram - A sad sauce just won’t do to for these simple but bougie 2-ingredient homemade burgers so I’ve chosen a new @muttipomodoroau Classic sauce to elevate things further. INGREDIENTS 400g minced brisket 100g smoked bacon or speck, minced or finely chopped 10 small dinner rolls 1/4 iceberg lettuce (shredded) Mutti rich and bold tomato sauce to slather on at will Mix the meat together to bind. Shape into ten 50g patties. Fry in a hot grill pan until well bar-marked and cooked thru. Assemble. #muttiwhenyouknowyouknow

Perfect! #gopies RECIPE. 220g raw sugar 1 egg 150 g self-raising flour 2 good tsps golden syrup 160 g sultanas 100 g butter, melted Preheat the oven to 180°C. Grease and line a 20 x 30 cm or 24 x 24 cm slice tin. Combine all the ingredients, except for the melted butter, in a large bowl. Pour in the melted butter and use a wooden spoon to mix everything together well. Press the dough into the prepared slice tin and bake for around 25 minutes. Cut while warm.

Caption : Dinner at @farmlore.in . What a gem of a place with locavorism at its core at this farm and mango plantation. Clean, fresh flavours of nasturtium, local pomelo and scallop. Or a pea custard with saffron corn broth. Or the richest cream from the farm in that cornet with Indian basil flowers. Dried fire ants from the plantation that have the tang of green mango, a sorbet made from a prized local fruit similar to a plum, and that duck skewer with that intensely satin-rich sauce marbled with kokum. Add it to your bucket list! What better way to do this than with simple tandoor-inspired chicken skewers cooked in the airfryer for @natalie_barr7 and @mattshirvo on Sunrise. Mix cup of Greek yoghurt with six crushed cloves of finely chopped garlic, 2tbsp of minced ginger, 1/4 cup of good tandoori paste, 2tbsp of tamarind paste, 2tsp of smoked paprika, 2tsp of Kashmiri chilli powder and 2tsp of dried fenugreek leaves (kasuri methi). Add 1kg of chook thighs cut into large chunks, stir to coat and marinate for at least 30 minutes. Skewer and cook in the pre-heated airfryer at top temp / 200c for 10mins. Or in the oven or under the grill until cooked thru and a little burnt in places. Serving with sliced onion, coriander chutney, salad and Indian style flatbread of your choosing.
