It is really very simple, but if you want to have elegant long grains that don’t stick together you must wash your rice well before it goes into the pot. The beauty of basmati is in its elegant long grain, and removing some of the starch with rinsing results in a beautiful fluffy rice that is perfect for pilafs or to be eaten plain with gravied curries and roasted meat and vegetables. It takes some time but it’s totally worth it!
