Give me a hot day and I’m going to make yogurt rice 🥵 I’m using basmati here but it’s not necessary since you’ll be breaking down the grains when mixed into the yogurt anyway. In South India where yogurt rice is popular we don’t use basmati rice but poni or other shorter grain white rice varieties. Any leftover white rice will do. Even jasmine is great. Use what you have! This recipe is also adaptable to how much rice you have left over, because you’re simply using equal parts yogurt and equal parts rice, and then adjusting the spices and tadka accordingly. Whenever I’ve asked what recipes you guys would like to see, there are always a few of you asking how I make my Basmati rice. It is really very simple, but if you want to have elegant long grains that don’t stick together you must wash your rice well before it goes into the pot. The beauty of basmati is in its elegant long grain, and removing some of the starch with rinsing results in a beautiful fluffy rice that is perfect for pilafs or to be eaten plain with gravied curries and roasted meat and vegetables. It takes some time but it’s totally worth it!

Yes, we call it manga curry in Tamil Nadu! (even though it’s eaten like a pickle!) It’s the 1 item out of a dozen I used to always look forward to at the ilai sappadu or banana leaf meal, at south Indian weddings. One of my favorite accompaniments for yogurt rice and many other dishes, this mango curry is so easy to make and will keep in the fridge for 4 or 5 days. Here is the recipe: Mango Curry* 3 large or 8 small green tender (sour) mangoes, diced super fine, with skin on and pit removed (I used 1 large, unripe, regular mango in this video) 1 ½ teaspoons kashmiri chile powder (cayenne works too) 2 tablespoons gingilly (untoasted sesame) oil or other neutral oil ½ teaspoon black mustard seeds ½ teaspoon asafetida powder 10 fresh curry leaves Place the diced mangoes, salt and chile powder in a bowl. Set aside. Heat the neutral oil in a small frying pan over medium heat; add the mustard seeds. When they start crackling and popping, add the asafetida powder right away. Remove from the heat and immediately add the curry leaves – be careful as they’ll splatter. Pour this sizzling oil mixture on top of the mango. A lot of you have asked if I use raw lentils in the tadka or tempering spices process from other videos – the answer is yes! They fry in the oil long enough to cook through and create a crunchy texture and nutty flavor that are a lovely addition to this yogurt rice and many other dishes. Also a great substitute when peanuts are not an option in certain dishes for crunch. These are split urad or gram dal or lentils. They are called black gram lentils but then they get hulled and become white. And they’re not really technically a lentil but a pulse, though we refer to them that way. Confusing maybe, but really delicious. Order some from an indian grocery and ask for “split skinless Urad.” Chana dal is also used the same way but not for yogurt rice.
