This technique works with several different types of fish. Skin your filet, scrape clean, lay out on a silpat or parchment paper, dry in a low oven, then fry. That’s literally it. And as a short cut, the dried skin pieces can be kept in the freezer until you have enough to fry. I’ll collect a big ziplock full and fry a big bowl to serve with crème fraiche and salmon roe for guests (or myself). This is one of my favorite snacks and ways to limit waste!
