Annabel Crabb Instagram – Experimental Fathers Day savoury scones. Got lucky!
(With the dad as well as the scones ❤️)

Heat oven to 180

2 cups SR flour
Extra tsp baking powder
1 cup grated cheese (I used Gruyère and Pecorino, a bitey cheddar would also be perfect
125g very cold butter, grated into the flour and quickly mixed through
1 spring onion chopped finely, use all the green bits
As much thyme as you can stand, chopped
Chives of your choice have em, chopped
1/2 zucchini finely grated (optional)
1/2 cup of olives, pitted and halved

Mix all these together, now for the wet ingredients.
1/2 cup Greek yoghurt
1/2 cup milk

Mix the yoghurt and milk together (I also added a couple of tbsp of caramelised onion I had in the fridge)
Now add to the dry ingredients and mix through in a very cursory fashion. You want a raggedy mix. Turn on to a floured bench and kind of mosh it into a disc with your floured hands. Cut out rounds or just cut into squares or wedges. On a tray, into oven 20min
