Annabel Crabb Instagram – Beautiful birthday celebration this weekend for my lovely friend @fionahughes3, a warm hearted, modest, funny, super competent general delight of a person. Also does not like sweet things so an intriguing birthday cake challenge. This one, concocted in collaboration with @glamgwenblake and modeled on the Swedish concept of Smorgastorte (or sandwich cake, and yes there are many umlauts and whatchamacallits missing from my reference) involves several large miche loaves from @goodwoodbakeshop from which rounds of bread were extracted like those arctic ice plug things, and layered with:
Salmon rillettes (hot smoked)
Zucchini and dill frittata
Beetroot pate
Tarama whipped w cream cheese.
Toppers: Cucumber ribbons and carved flowers, quail eggs, radish flowers, caper berries, horseradish and dill cream, pink pepper corns, salmon roe, candied baby beets, gone-to-seed herbs and nasturtium flowers from our primary school’s kitchen garden (stolen under cover of Book Week), also smoked salmon.
Thank you to our Scandi friends for being such sickoes as to normalise cakes made of fish. Also please enjoy my teenage son’s highly skeptical response on having the concept outlined.
Most importantly: Happy birthday to a good, good woman. ❤️
