Ingredients
● 1 pound yautia, peeled and cut into chunks
● 1 pound malanga (taro), peeled and cut into chunks
● 1 pound batata (sweet potato), peeled and cut into chunks
● 2 Avocados, peeled and diced
● 1 shallot, finely chopped
● 2 cloves garlic, minced
● 2 tablespoons olive oil
● 1 lime, juiced
● 4 cups low-sodium vegetable broth
● 1 cup unsweetened almond milk
● 1 chicken bouillon (optional)
● Salt and pepper to taste
● Fresh cilantro for garnish (optional)
Instructions
1. Prepare the Viandas:
– Peel and cut the yautia, taro and batata into large chunks.
2. Sauté the Aromatics:
– In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent, about 3-4 minutes.
3. Boil the Viandas:
– Add the viandas to the pot along with the vegetable broth and chicken bouillon (if using). Bring to a boil over medium-high heat. Reduce the heat and simmer until the vegetables are tender, about 20-30 minutes.
4. Blend the Soup:
– Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth.
5. Add Almond Milk:
– Stir in the unsweetened almond milk. Continue to cook over low heat until the soup is heated through.
6. Season and Serve:
