Catherine Bell Instagram – Quick & easy veggie scramble!
Got home at 10pm and realized I was starving. Been working out a lot and knew I needed a little more protein for the day, so rather than reach for a bagel or cereal (my old ways!), I grabbed the veggies I had in the fridge and whipped this up in 5-6 minutes!
-spinach
-zucchini
-tomato
(You can add onions or peppers or whatever else you got!)
SautƩ the veggies in a touch of olive oil
Whisk the eggs.
I added a tiny bit of butter before I added the eggs.
Scramble it all up!
Add salt, pepper, garlic powder.
And top with about 1/4 avocado!
Iām trying to eat more fruits and veggies so I had a plum and nectarine for desert! āŗļøā¤ļøšš¼
