Fudgy Chocolate Chip Brownies
Ingredients:
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup semi-sweet chocolate chips (for the batter)
1/4 cup semi-sweet chocolate chips (for topping)
Instructions:
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a bit of an overhang (to help lift the brownies out later). Lightly grease the parchment paper with cooking spray or butter.
In a medium bowl, whisk together the melted butter and sugar until smooth and well combined. Add the eggs and vanilla extract, whisking until fully incorporated and smooth.
In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Stir until just combined (do not overmix).
Gently fold in 1/2 cup of chocolate chips into the brownie batter.
Pour the brownie batter into the prepared pan, spreading it evenly with a spatula. Sprinkle the remaining 1/4 cup of chocolate chips over the top for an extra chocolatey finish.
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter). The edges should be set, but the center will be soft and fudgy.
Allow the brownies to cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Slice into squares and serve.
