I’m spending my snow days cooking and reading by the fire. It’s like the holidays got extended for a bit longer. Soufflé Pancakes Ingredients: 3 eggs, separated 1/4 cup granulated sugar 1/2 cup cake flour (AP flour works too) 1/2 teaspoon baking powder 1/8 teaspoon salt 3 tablespoons whole milk (or any milk you like) 1 teaspoon vanilla extract 2-4 tablespoons water for cooking Butter for cooking Tools: 12-inch skillet (nonstick or cast iron with deep sides) Lid for the skillet hand mixer or stand mixer Optional: 1 ounce cookie scoop Method: Separate the eggs. Reserve the whites for later. Start by whisking the egg yolks, milk, and vanilla together. Add the flour, baking powder, and salt to the egg yolk mixture. Stir until smooth and set aside. Using a hand or stand mixer, beat the egg whites with your until frothy. Gradually add the sugar and continue whipping until you reach stiff peaks. (Stiff peaks are important!) Set your skillet on low heat, adding a small pat of butter. Let it melt while you prep the batter. Gently fold a third of the whipped egg whites into the egg yolk mixture. Once it’s combined, fold in the rest of the egg whites carefully—no overmixing! Scoop 3-4 portions of batter into your warm skillet, spaced out (use a cookie scoop or spoon). For extra fluff, add another scoop of batter on top of each pancake. Carefully pour 1 tbsp of water into the skillet, avoiding the batter, then cover with the lid. Set a timer for 2 minutes. After 2 minutes, uncover the skillet and add another scoop of batter onto each pancake. Replace the lid and cook for another 4-5 minutes on low-medium heat. Once the bottom is golden brown, carefully flip the pancakes. Add another tbsp of water to the skillet, cover, and cook for 4 more minutes until the bottom is golden and the sides are dry. Repeat for the remaining batter, adjusting heat as needed to avoid burning.

Jumbo Blackberry Crumble Muffins Ingredients: For the muffins: 1/2 cup (115g) unsalted butter, softened 1 cup (200g) granulated sugar 2 large eggs 2 teaspoons vanilla extract 2 cups (250g) all-purpose flour 2 teaspoons baking powder 1 teaspoon salt 1/2 cup (120ml) whole milk 2 cups (300g) fresh or frozen blackberries For the crumble topping: 1/2 cup (60g) all-purpose flour 1/4 cup (50g) granulated sugar 1/4 cup (60g) cold unsalted butter, cubed Instructions: Preheat your oven to 375°F (190°C) and line a jumbo muffin tin with 6 large muffin liners. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, then gently fold in the blackberries. 3 reasons why I love this recipe… 1- it’s an “assemble cooking” recipe. No need to do a bunch of prep work, you just buy a few good ingredients and put them together. 2- No matter a person’s confidence or skill level in the kitchen this recipe will be successful for them! 3- it tastes DELICIOUS. Grilled Veggie lasagna Ingredients: 1 bag (around 12-16 ounces) of frozen grilled vegetables (bell peppers, zucchini, onions, artichokes) 1 jar (24-26 ounces) marinara sauce 15-ounce container of ricotta cheese 1 teaspoon Italian seasoning 1 teaspoon garlic powder 2 cups of shredded mozzarella cheese 6 slices smoked provolone 1 pound no-boil lasagna noodles Salt and pepper Method: Preheat the oven to 375°F To a small bowl add the ricotta cheese, Italian seasoning and garlic powder. Mix to combine. Taste and season with salt and pepper Now, it’s time to assemble. Start with a thin layer of marinara sauce at the bottom of a greased 9×13-inch baking dish. This’ll keep things from sticking and add flavor. Place a layer of no-boil lasagna noodles over the sauce. Don’t worry about overlapping; they’ll soften as they bake. Spoon on some ricotta cheese out evenly. It’s okay if it’s a little lumpy. Add a layer of no boil. Add sauce then vegetables and top with smoked provolone. Add another layer of pasta. Continue making layer until all the pasta and filings have been used. Top with remaining sauce and sprinkle with shredded cheese. Cover that lasagna dish with foil, and bake for about 30 minutes. Then, remove the foil and let it bake another 10-15 minutes until the cheese is golden and bubbly. Once it’s done, let it cool for a few minutes to set up. What do you make when you are in the middle of a snow storm? Today I went with brownies! Fudgy Chocolate Chip Brownies Ingredients: 1/2 cup (1 stick) unsalted butter, melted 1 cup granulated sugar 2 large eggs, at room temperature 1 teaspoon vanilla extract 1/3 cup unsweetened cocoa powder 1/2 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon baking powder 1/2 cup semi-sweet chocolate chips (for the batter) 1/4 cup semi-sweet chocolate chips (for topping) Instructions: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a bit of an overhang (to help lift the brownies out later). Lightly grease the parchment paper with cooking spray or butter. In a medium bowl, whisk together the melted butter and sugar until smooth and well combined. Add the eggs and vanilla extract, whisking until fully incorporated and smooth. In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Stir until just combined (do not overmix). Gently fold in 1/2 cup of chocolate chips into the brownie batter. Pour the brownie batter into the prepared pan, spreading it evenly with a spatula. Sprinkle the remaining 1/4 cup of chocolate chips over the top for an extra chocolatey finish. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter). The edges should be set, but the center will be soft and fudgy. Allow the brownies to cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Slice into squares and serve. Enjoy these fudgy, chocolatey brownies with plenty of chocolate chips in every bite! You can store leftovers in an airtight container for up to 4 days.
