Jumbo Blackberry Crumble Muffins
Ingredients:
For the muffins:
1/2 cup (115g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups (250g) all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup (120ml) whole milk
2 cups (300g) fresh or frozen blackberries
For the crumble topping:
1/2 cup (60g) all-purpose flour
1/4 cup (50g) granulated sugar
1/4 cup (60g) cold unsalted butter, cubed
Instructions:
Preheat your oven to 375°F (190°C) and line a jumbo muffin tin with 6 large muffin liners. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, then gently fold in the blackberries.
For the crumble topping, combine the flour and sugar in a small bowl. Cut in the cold butter with a pastry cutter or your fingers until the mixture forms coarse crumbs.
Spoon the muffin batter evenly into the prepared muffin cups, filling each about three-quarters full. Sprinkle the crumble topping generously over each muffin.
Bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy! | Posted on 04/Jan/2025 19:56:08
