At the end of every winter we do a pantry and freezer clean out to get ready for the spring and summer harvests that will be coming our way soon. These lentils have just been waiting around ready to be used… Creamy Lentil Shepherd’s Pie Ingredients: Filling: 4 tbsp olive oil 1 onion, chopped 2 celery stalks, chopped 2 carrots, chopped 1 tbsp garlic powder 1 tsp black pepper 1/2 tsp red pepper flakes 2 tsp poultry seasoning 2 tbsp flour 1/4 cup white wine (or beer/bourbon) 3/4 cup vegetable stock 3/4 cup heavy cream 3 cups cooked lentils 1 cup frozen peas Salt to taste Mashed Potato Topping: 4 large potatoes, peeled and diced 6 tbsp olive oil/butter 1 tsp black pepper 2 tbsp everything bagel seasoning Salt to taste Method: Boil diced potatoes in salted water until tender (15-20 mins). Drain and mash with olive oil/butter, black pepper, everything bagel seasoning, and salt. Set aside. Heat olive oil in a skillet. Sauté onion, celery, and carrots for 5-7 mins. Add garlic powder, black pepper, red pepper flakes, and poultry seasoning. Stir in flour and cook for 1-2 mins. Add wine, stock, and cream. Simmer until thickened. Stir in lentils and peas. Season with salt. Preheat oven to 375°F. Transfer lentil mixture to a greased baking dish. Spread mashed potatoes on top. Bake for 20-25 mins, until golden. For extra crispiness, broil for 2-3 mins. Cream Cheese Filled King Cake (Baked in Cast Iron Skillet) Ingredients: For the Dough: 1/2 cup warm milk (about 110°F) 1/4 cup granulated sugar 2 1/4 teaspoons active dry yeast (1 packet) 1/2 cup butter, softened 1/2 cup cream cheese, softened 3 large eggs 1 teaspoon vanilla extract 1/2 teaspoon salt 4 cups all-purpose flour (plus extra for dusting) 2 pecans or plastic baby For the Cream Cheese Filling: 8 oz cream cheese, softened 1/4 cup powdered sugar 1 teaspoon vanilla extract Pinch of salt For the Icing: 1 1/2 cups powdered sugar 2 tablespoons milk 1 teaspoon vanilla extract For the Decoration: Colored sugar (purple, green, and yellow) Instructions: Instructions: Combine warm milk and sugar in a bowl, sprinkle yeast on top, and let sit for 5 minutes until frothy. Cream butter and cream cheese in a large bowl. Add eggs, vanilla, and salt, then mix. Gradually add flour, 1 cup at a time, and knead for about 5 minutes until smooth. Let rise in a greased bowl, covered, for 1-1.5 hours. For the filling, beat cream cheese, powdered sugar, vanilla, and salt until smooth. Set aside. Punch down the dough and roll into a 12×20-inch rectangle. Drop the pecans or plastic baby in the center. Spread the cream cheese filling in a line down the middle, leaving 2 inches on each side. Fold the dough over, sealing the edges to form a log. Shape the dough into a ring and place it in a parchment-lined cast iron skillet. If you have an oven-safe bowl, place it in the center to maintain the ring shape. Cover and let rise for 30 minutes. Preheat oven to 375°F. Bake for 25-30 minutes until golden brown and hollow-sounding when tapped. Let cool slightly. Whisk together powdered sugar, milk, and vanilla for the icing. Butternut Squash Wellington Ingredients: 1 medium butternut squash, peeled and cut in half lengthwise, seeds removed 1 sheet store-bought puff pastry (thawed if frozen) 1 tbsp olive oil Salt and pepper, to taste 1 egg (for egg wash, optional) For the Mushroom Duxelles: 8 oz fresh shiitake mushrooms (or any mushrooms of your choice), roughly chopped in a food processor 1 tbsp butter 1 small onion, finely diced 2 cloves garlic, minced 1 tbsp fresh thyme, finely chopped (or 1 tsp dried thyme) 2 tbsp dry white wine (optional) 4 ounces cream cheese Salt and pepper, to taste Instructions: Preheat the oven to 400°F (200°C). Drizzle the butternut squash With oil and roast cut side down on a cookie sheet until tender, about 25-30 minutes. Remove from the oven and cool. Meanwhile in a pan, melt butter over medium heat. Cook onion for 4-5 minutes. Add garlic and thyme, cook 1 minute. Stir in chopped mushrooms and cook 8-10 minutes until moisture evaporates. Add wine if desired, cook until absorbed. Stir in the cream cheese. Season with salt and pepper. Cool. Roll out puff pastry on a parchment-lined sheet. Spread mushroom duxelles in the center. Place roasted squash halves on top. Fold pastry over and seal edges. Score top lightly and brush with beaten egg (optional). Bake for 25-30 minutes until pastry is golden and puffed.

Vegan Banana Bread Ingredients: 4 ripe bananas, mashed (about 1 1/2 cups) 1/2 cup vegetable or avocado oil 3/4 cup cane sugar 2 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon salt Raw sugar, for sprinkling on top Method: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Mash the bananas in a bowl, then stir in the cane sugar, vanilla, and oil until combined. In a separate bowl, whisk the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Pour the batter into the pan, smooth the top, and sprinkle with raw sugar.
