Cream Cheese Filled King Cake (Baked in Cast Iron Skillet)
Ingredients:
For the Dough:
1/2 cup warm milk (about 110°F)
1/4 cup granulated sugar
2 1/4 teaspoons active dry yeast (1 packet)
1/2 cup butter, softened
1/2 cup cream cheese, softened
3 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
4 cups all-purpose flour (plus extra for dusting)
2 pecans or plastic baby
For the Cream Cheese Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
Pinch of salt
For the Icing:
1 1/2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
For the Decoration:
Colored sugar (purple, green, and yellow)

Combine warm milk and sugar in a bowl, sprinkle yeast on top, and let sit for 5 minutes until frothy. Cream butter and cream cheese in a large bowl. Add eggs, vanilla, and salt, then mix. Gradually add flour, 1 cup at a time, and knead for about 5 minutes until smooth. Let rise in a greased bowl, covered, for 1-1.5 hours.
For the filling, beat cream cheese, powdered sugar, vanilla, and salt until smooth. Set aside.
Punch down the dough and roll into a 12×20-inch rectangle. Drop the pecans or plastic baby in the center. Spread the cream cheese filling in a line down the middle, leaving 2 inches on each side. Fold the dough over, sealing the edges to form a log. Shape the dough into a ring and place it in a parchment-lined cast iron skillet. If you have an oven-safe bowl, place it in the center to maintain the ring shape.
Cover and let rise for 30 minutes. Preheat oven to 375°F. Bake for 25-30 minutes until golden brown and hollow-sounding when tapped. Let cool slightly.
Whisk together powdered sugar, milk, and vanilla for the icing. Drizzle over the cooled cake and sprinkle colored sugars in purple, green, and yellow while the icing is still wet.
