Vegan Banana Bread
Ingredients:
4 ripe bananas, mashed (about 1 1/2 cups)
1/2 cup vegetable or avocado oil
3/4 cup cane sugar
2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
Raw sugar, for sprinkling on top
Method:
Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
Mash the bananas in a bowl, then stir in the cane sugar, vanilla, and oil until combined.
In a separate bowl, whisk the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Pour the batter into the pan, smooth the top, and sprinkle with raw sugar. Bake for 55-65 minutes, or until a toothpick comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
