Creamy Lentil Shepherd’s Pie
Ingredients:
Filling:
4 tbsp olive oil
1 onion, chopped
2 celery stalks, chopped
2 carrots, chopped
1 tbsp garlic powder
1 tsp black pepper
1/2 tsp red pepper flakes
2 tsp poultry seasoning
2 tbsp flour
1/4 cup white wine (or beer/bourbon)
3/4 cup vegetable stock
3/4 cup heavy cream
3 cups cooked lentils
1 cup frozen peas
Salt to taste
Mashed Potato Topping:
4 large potatoes, peeled and diced
6 tbsp olive oil/butter
1 tsp black pepper
2 tbsp everything bagel seasoning
Salt to taste
Method:
Boil diced potatoes in salted water until tender (15-20 mins). Drain and mash with olive oil/butter, black pepper, everything bagel seasoning, and salt. Set aside.
Heat olive oil in a skillet. Sauté onion, celery, and carrots for 5-7 mins. Add garlic powder, black pepper, red pepper flakes, and poultry seasoning. Stir in flour and cook for 1-2 mins. Add wine, stock, and cream. Simmer until thickened. Stir in lentils and peas. Season with salt.
Preheat oven to 375°F. Transfer lentil mixture to a greased baking dish. Spread mashed potatoes on top. Bake for 20-25 mins, until golden. For extra crispiness, broil for 2-3 mins.
Let rest for a few minutes before serving. Enjoy!
