Annabel Crabb Instagram – One of the greatest cooking tips I was ever given (I think it was from @alicekateryan thank you) – was to put a Parmesan rind into my minestrone while cooking. It enhances the depth of flavour to a startling degree. Also works with bolognese but of course that is advice best run by @benshewry who has spent more time in the lab on this one than I.
So I never throw away a Parmesan rind. I wrap it and pop it in the freezer for future use.
I have been working some very long hours of late and a couple of days ago I decided to take a quick break while the kettle was boiling and consolidate my cheese rinds. Yes, there were TWENTY in my freezer.
