I love these because they dont spike my glucose like other brownies; tested with my continuous glucose monitor! Avoiding glucose spikes has been a game changer for my mood, skin, hormones, everything! Glucose spikes age us prematurely, so even if you dont I have a problem with insulin resistance like I do from PCOS, everyone benefits from avoiding glucose spikes!
Wet Ingredients
• 1 ½ cups semi-sweet chocolate chips, divided
• ½ cup refined coconut oil (95 grams)
• 3 eggs
• ¾ cup coconut sugar
• 2 teaspoons vanilla extract
Dry Ingredients

• ⅓ cup almond flour
• 2 tablespoons cocoa powder
• ¼ teaspoon salt
Bake at 350°F for 20-25 mins in an 8×8 greased glass brownie pan
