Amrita Raichand Instagram - Happy Lohdi :) Thank you @amritaraichand for sharing such a warm recipe :) Marunda Ingredients Ghee-1 Tbsp Jaggery-1 cup Water - 1 tbsp Roasted Chana(Black Chickpeas)- 1/2 cup Roasted & skinless peanuts-1/2 cup Murmura (Puffed Rice)-2 cups (you may use popcorn also if you like) Cardamom powder- 1/2 tsp Method -Heat ghee in a wok/deep pan. Add the jaggery along with a splash of water & allow it to melt completely. -Now add the roasted chana, peanuts & mix well. -Add murmura, a pinch of cardamom powder & give it a good mix. -Remove on a plate, and as soon as you can handle it, roll them into large spheres which we call MARUNDAS. Important Recipe Note- Do not let it cool too much, otherwise it wonā€™t come together

Recipe: Sattu Beetroot Hummus Ingredients 1 large boiled beetroot 1 cup roasted channa(without skin) 2 tsp toasted white sesame seeds 2 garlic cloves 1ā€“2 tbsp lime juice Ā½ tsp roasted cumin powder 6 tbsp extra virgin olive oil 2ā€“3 ice cubes Salt to taste For garnish & serving Extra virgin olive oil for drizzling Red chilli powder Pita bread or crackers Method 1. Amrita Raichand Instagram - This strawberry crumble has kinda become my signature dish besides of course the jungles maas you keep hearing people rave about when they visit my home šŸ˜… My mother-in-law asked me when she saw this video; why the hell do you give away all your recipes??? If you think you can guess the answer I gave her, pen it down in the comments & Iā€™ll let you know if you are right or notā˜ŗļø INGREDIENTS 400 grams strawberries (halved) Castor sugar - 1/4th cup Vanilla extract- 2 tsp For the Crumble : All-purpose flour(maida) - 1/2 cup Baking powder- 1 tsp Butter (chilled and cubed)- 75 gms Rolled Oats - 1/2 cup Almond flour/ ground almonds- 1/4 th cup Almonds(sliced)- 1/2 cup Brown sugar- 75 gms METHOD Preheat the oven to 180Ā°C Place the strawberries in a serving dish. Sprinkle them with castor sugar & vanilla extract. With the help of a spoon just mix all the ingredients and allow the strawberries to macerate slightly. Donā€™t leave it for too long though. For the crumble topping, take a bowl & add the flour, baking powder to it & using a whisk, mix it. Then add the chilled butter & rub it into the flour till looks like breadcrumbs. Now add the almond flour, oats, brown sugar & half of the almond flakes into the flour & butter mixture; give it a good mix with a fork. Topple this entire crumble mixture over the strawberries. Finally distribute the remaining sliced almonds on top & bake for about 20-25 minutes. The crumble should look golden & crisp on top, with some of the strawberry juice bubbling around. Remove when done and place it on a cooling rack. Amrita Raichand Instagram - Cooking for your heart! ā¤ļø Guess my next vibrant, heart-healthy recipe below!šŸ‘‡šŸ¼ Recipe: Chicken Quinoa Bowl Ingredients Peri- peri sauce (Link In Bio) - 1 small sauce boat Quinoa- 1/4 th cup Water - 1 cup Garlic cloves(chopped) - 5-6 Kale leaves Chilli flakes Himalayan Salt and pepper to taste Chicken breast (boneless) - 100 gm Peri- peri spice mix Salt & pepper to taste Lime juice Olive oil Broccoli florets- 1/2 cup Red and yellow bell peppers- 1/2 cup Cherry tomatoes (halved)- 5-6 Salt and pepper to taste Avacado slices Method In a pot, add thoroughly washed quinoa along with the water, garlic & salt. Bring it to a boil and then let it simmer on low flame till you see white ring around pearls of quinoa. When almost all the water has been absorbed, add kale leaves along with some chilli flakes and give it a toss. Use a fork and fluff it up! There should be a nice bite to the quinoa. Toss the quinoa into a serving bowl. Now marinate the chicken with salt, pepper, peri-peri spice and lemon juice. Then heat a dash of olive oil in a pan and add the chicken slices on high flame. When itā€™s nice and brown on both sides and cooked through, take it out and top it on one side of the quinoa. Now in the same pan, add sliced garlic, sautĆ© till golden, then add a splash of water followed by the broccoli florets. (Blanching of the broccoli hence is not needed) . Then add the yellow & red bell peppers and sautĆ© till they are tender. Throw in the cherry tomatoes, season with salt and pepper and take it off of the pan. Add it next to the chicken. Slice up some avocado, squeeze some lime juice on it and place it between the veggies and the chicken. Serve your heart- healthy quinoa chicken immediately with the prepared peri- peri sauce. If you think you can guess the answer I gave her, pen it down in the comments & Iā€™ll let you know if you are right or notā˜ŗļø INGREDIENTS 400 grams strawberries (halved) Castor sugar - 1/4th cup Vanilla extract- 2 tsp For the Crumble : All-purpose flour(maida) - 1/2 cup Baking powder- 1 tsp Butter (chilled and cubed)- 75 gms Rolled Oats - 1/2 cup Almond flour/ ground almonds- 1/4 th cup Almonds(sliced)- 1/2 cup Brown sugar- 75 gms METHOD Preheat the oven to 180Ā°C Place the strawberries in a serving dish. Sprinkle them with castor sugar & vanilla extract. With the help of a spoon just mix all the ingredients and allow the strawberries to macerate slightly. Donā€™t leave it for too long though. For the crumble topping, take a bowl & add the flour, baking powder to it & using a whisk, mix it. Then add the chilled butter & rub it into the flour till looks like breadcrumbs. Now add the almond flour, oats, brown sugar & half of the almond flakes into the flour & butter mixture; give it a good mix with a fork. Topple this entire crumble mixture over the strawberries. Finally distribute the remaining sliced almonds on top & bake for about 20-25 minutes. The crumble should look golden & crisp on top, with some of the strawberry juice bubbling around. Likes : 916Amrita Raichand - 864 Likes - Cooking for your heart! ā¤ļø Guess my next vibrant, heart-healthy recipe below!šŸ‘‡šŸ¼ Recipe: Chicken Quinoa Bowl Ingredients Peri- peri sauce (Link In Bio) - 1 small sauce boat Quinoa- 1/4 th cup Water - 1 cup Garlic cloves(chopped) - 5-6 Kale leaves Chilli flakes Himalayan Salt and pepper to taste Chicken breast (boneless) - 100 gm Peri- peri spice mix Salt & pepper to taste Lime juice Olive oil Broccoli florets- 1/2 cup Red and yellow bell peppers- 1/2 cup Cherry tomatoes (halved)- 5-6 Salt and pepper to taste Avacado slices Method In a pot, add thoroughly washed quinoa along with the water, garlic & salt. Bring it to a boil and then let it simmer on low flame till you see white ring around pearls of quinoa. When almost all the water has been absorbed, add kale leaves along with some chilli flakes and give it a toss. Use a fork and fluff it up! There should be a nice bite to the quinoa. Toss the quinoa into a serving bowl. Now marinate the chicken with salt, pepper, peri-peri spice and lemon juice. Then heat a dash of olive oil in a pan and add the chicken slices on high flame. When itā€™s nice and brown on both sides and cooked through, take it out and top it on one side of the quinoa. Now in the same pan, add sliced garlic, sautĆ© till golden, then add a splash of water followed by the broccoli florets. (Blanching of the broccoli hence is not needed) . Then add the yellow & red bell peppers and sautĆ© till they are tender. Throw in the cherry tomatoes, season with salt and pepper and take it off of the pan. Add it next to the chicken. Slice up some avocado, squeeze some lime juice on it and place it between the veggies and the chicken. Serve your heart- healthy quinoa chicken immediately with the prepared peri- peri sauce.
