Las Habichuelas 🫘
Ingredients:
• 1 lbs Pinto beans
• 1 slice green pepper
• 1/4 onion
• 1 garlic clove
• 2 bay leaves
• 4 cups water
For the Sofrito Base:
• 2 tbsp aceite de achiote (annatto oil)
• 2 tbsp sofrito
• 1 tsp garlic paste
• 2 tbsp pitted olives
• 1 tbsp tomato paste
• 1/2 tsp adobo
• 1/2 tsp oregano
• 1/2 cup diced squash (calabaza)

Ingredients:
• 2 lbs party wings
• 2 tbsp aceite de achiote (annatto oil)
• 1 tbsp adobo
• 1 tbsp mojo rub
• 1 tsp garlic salt
• 1 tsp baking powder (for extra crunch)
Instructions:
1. Season the Wings: In a large bowl, toss the wings with aceite de achiote, adobo, mojo rub, garlic salt, and baking powder. Make sure they’re evenly coated. Let them marinate for at least 30 minutes (or overnight for deeper flavor).
2. Fry to Perfection: Heat oil in a deep pan to 350°F (175°C). Fry wings in batches for 8-10 minutes until golden brown and crispy.
