Valentine Thomas Instagram – Some tuna will turn brown right away. Sown will take 2-3 days! But at no stage it is watermelon pink 🍉
On the last image:
1- Top left was filleted after being on ice for 24hrs. 2- Top right was vacuumed sealed, never frozen after 2 days.
3- Bottom left is carbon monoxide treated
4- Bottom right vacuum sealed same day as caught, right after filleted and frozen same night.
5- Loin holding at beginning of video, never frozen, 3 days after being caught. Different fish of photo 4!
Different tuna can react differently due to several factors: myoglobin content (the higher the fastest it will turn brown), fat content (fat oxidize quicker), temperature fluctuations, handling practices and enzymatic activity (eg. if it sat longer on the boat).
