Valentine Thomas Instagram – Alright @zuck let’s see if you’re serious about this. I’ve had all the bad H words that exist in my inbox all day. So let’s push this and see how « 2 meals 1 fish » will do.
Excellent recipe if you want to use a whole fish btw 🤷♀️
1- Filet your fish
2- Make a fumet (fish version of stock) with the carcasses.
3- Use the fumet to make a sauce (make a roux, so equal butter and flour, and add the fumet until nice and thick). You can add lemon juice, capers, heavy cream, tarragon. So many options.
4- Fry the fish in a pan.
5- Serve covered with the sauce you just made.
