“Will I ever open a restaurant?” That’s the question I get asked most often. Honestly, I don’t know—maybe yes, maybe no. What I do know is how much I love doing pop-ups. They let me collaborate with incredibly talented people all over the world, learning something new every single time. There’s a unique perspective I bring to my work, shaped by gathering my own food—though some of my methods might not exactly pass FDA approval (ha!). I don’t want to lose that edge. Growing up as a little bookworm scared of my own shadow in downtown Montreal, I became a (killing) butterfly later in life. And O don’t want to change a thing, especially with bébé. Bringing her food I harvested will be my greatest joy in life by far 🥹
Feeling after 8 weeks of intense training finally seeing results 🥹 There are not a lot of programs out there meant for new moms. There is so much to consider. Lack of time, nutrition for post partum, efficiency, exercising with baby. I HATE inefficiency. I’m all for the work smarter not harder, especially with a baby. Alright @zuck let’s see if you’re serious about this. I’ve had all the bad H words that exist in my inbox all day. So let’s push this and see how « 2 meals 1 fish » will do. Excellent recipe if you want to use a whole fish btw 🤷♀️ 1- Filet your fish 2- Make a fumet (fish version of stock) with the carcasses. 3- Use the fumet to make a sauce (make a roux, so equal butter and flour, and add the fumet until nice and thick). You can add lemon juice, capers, heavy cream, tarragon. So many options. 4- Fry the fish in a pan. 5- Serve covered with the sauce you just made. Congratulations you just created 2 meals with 1 fish, creating zero waste.

That’s it!! 🥳🥳

Don’t throw fish away, make Gravlax instead 😌 This recipe is “fancier”. Want an easier one? Half sugar, half salt. Cover the fish. Fridge for 24h. Rinse and pat dry. Done!
