This year again, I had the privilege of preparing miso under the guidance of Ms Kumi Takahashi.
Using a traditional cedar barrel and naturally grown ingredients, in such a beautifully simple and natural environment — it is always something I feel deeply grateful for.
After the miso-making, Ms Takahashi’s home-cooked dishes are another joy I look forward to every time.
Truly, truly delicious.
