Birria ravioli…

We had leftover birria from taco night a couple days ago so I stashed a bit for something fun. I made a little extra sauce using guajillo & cascabel chili’s, onion, garlic, chili powder, cumin, oregano, lime zest and chicken stock. Brought that to a boil then blended it until it was silky smooth.. I tossed the leftover beef in and let that cook down for about an hour to really allow those flavors to come together. During the cooking process I decided to toss out the tortilla and do something a tad bit different. So I whipped up a little fresh pasta and decided to put my own spin on a Mexican classic… birria ravioli!!!
I took a fresh pasta sheet, added a little birria as well as queso fresco for a little creaminess (I hate the word creamy) then added the remaining pasta sheet on top, removed any air from the ravioli and crimped the edges with a fork.. popped that bundle of joy into a pot of boiling water for a few minutes then dropped into a bowl, added the consomé and topped it off with onion, cilantro, Serrano chili’s and cotija cheese.
THIS DISH WAS AMAZING!!!!!!!!!

When it comes to food, make sure to think outside the box.. use your imagination and ultimately have fun with whatever you decide to create.
