I call these the Happy House Cookies because our whole house is stoked on them! They have a great chewy texture and taste AMAZING. My secret ingredient is the Primal Kitchen Chocolate Coconut Collagen Fuel because it adds some extra chocolatey flavor.

– 1 cup of Butter
– 1 cup of sugar
– 1 cup of brown sugar
– 1 cup of Macadamia nut butter (or peanut butter)
– 1 tsp vanilla
– 2 eggs
– 1.5 cups of flour
– 1 cup of Primal Kitchen Chocolate Coconut Collagen Peptides
– 1 tsp salt
– 1 tsp baking soda
– 1/2 tsp baking powder
– 1.5 cups of oatmeal
– 1.5 cups of shredded coconut
– 1 cup of chocolate chips

Preheat oven to 350 degrees. Cream together the butter and sugars. Mix in macadamia nut butter. Add eggs and vanilla. In a separate bowl, mix the flour, collagen, baking soda, salt and baking powder. Combine oatmeal and shredded coconut with the dry ingredients. Add the dry ingredients to the butter mixture. Mix well. Then fold in chocolate chips. We like incorporating beets into our diet because they’re a great source of vitamins and minerals. The bright color makes this salad pop and the Primal Kitchen Chipotle Lime Mayo adds a zesty flavor 😋

– 1lb of potatoes (about 2-3 large potatoes)
– .5 lb of beets (about 1 large beet)
– 2 carrots
– 3 sticks of celery
– 3 hard boiled eggs
– 1/2 cup of greek yogurt
– 1/2 cup of Primal Kitchen Chipotle Lime Mayo
– 3 Tbls of fresh lemon juice
– 1/4 tsp Paprika
– Salt to taste

– Optional: Add a Tablespoon or two of your favorite hot sauce

Boil or steam potatoes and beets. Chop cooked potatoes, cooked beets, hard boiled eggs, celery and carrots into cubes. Add to a large bowl. Stir in all other ingredients until fully mixed.
