Bethany Hamilton Instagram – Sharing another recipe – here’s our Chipotle Lime Beet & Potato Salad! #sponsored We like incorporating beets into our diet because they’re a great source of vitamins and minerals. The bright color makes this salad pop and the Primal Kitchen Chipotle Lime Mayo adds a zesty flavor 😋 – 1lb of potatoes (about 2-3 large potatoes) – .5 lb of beets (about 1 large beet) – 2 carrots – 3 sticks of celery – 3 hard boiled eggs – 1/2 cup of greek yogurt – 1/2 cup of Primal Kitchen Chipotle Lime Mayo – 3 Tbls of fresh lemon juice – 1/4 tsp Paprika – Salt to taste -cilantro – Optional: Add a Tablespoon or two of your favorite hot sauce Boil or steam potatoes and beets. Chop cooked potatoes, cooked beets, hard boiled eggs, celery and carrots into cubes. Add to a large bowl. Stir in all other ingredients until fully mixed.
