The key to that I have realised, is the accurate cut. The way each vegetable or meat is cut, determines the textural experience of the food we eat. Culinary school certainly taught me knife skills; but my Amma’s mastery over the knife, is what inspired me to explore the world of food. Till date she rarely uses the cutting board. From chopping raw papaya into tiny pieces, slicing cabbage into thin shreds, or scaling and skinning fish, my mum still does it all without the need to place it on a board. I have observed that, this is the way for most mothers and grandmothers in India. The cutting board and chef’s knife was introduced to me by my father. He LOVES to show off his knife skills, and it is He who first taught me to cut vegetables into “julienne”. Cooking a meal together, in our family kitchen is a chaotic calm . My father likes things the restaurant way, while my mum likes to work on the fly. I think I have taken from both of them when it comes to food. If there is a culinary term that my dad loves to throw around while in the kitchen, and one my mom absolutely cannot stand is “Mise en place” “MEEZ - AHN - PLAHS” . Parvathy Omanakuttan Instagram – ‘Mise en place” – “MEEZ – AHN – PLAHS” I remember the day I first heard that word. It was my Father’s Day off from work, and he was in the kitchen ,helping mom prep for our favorite Biryani.
This is also a word he loves to throw around to annoy my mom because they both have very different ways of working in the kitchen.
Although I had no clue what this new word meant I wanted to know more. While slicing the onions paper thin, my father explained to me the rules of restaurant cooking created by the french.
That day, I was introduced to a culinary world with some very difficult words to pronounce.
The beauty of it all is that, Without me realising, my culinary lessons had started very early on in life; it inspired me to learn about world food.
In the words of Julia child – “It’s so beautifully arranged on the plate — you know for sure someone’s fingers have been all over it.” … “BUEN PROVECHO” {BWHEN- PROH- VECHCHOH} #love #vegetarian #instagram #food #foodie #health #healthyfoodshare #plantbased #foodporn #instafood #healthy #foodphotography #homemade #foodblogger #foodstagram #yummy #healthylifestyle #vegetarianfood #vegetarianrecipes #delicious #veggie #organic #foodlover #vegetables #tastyfood #healthyeating #foodnetwork #culinary #cheflife #instagood Home sweet home
Parvathy Omanakuttan Instagram – Ending my Monday night on a perfectly tangy and not too sweet “cheesecakey” note … Mmmmmmm 😋
Aside from the painful wait to let the cheesecake set completely (24hrs😅); The lemon juice and zest in the cheesecake perfectly balances the sweetness, the nuts add the body and crunch, the filo pastry did turn out to be less crisp compared to what I had imagined but in all reality with the cheesecake filling on the inside and sugar syrup on the outside it was expected to happen. *Do I love the taste of it? – OH YESSSS; *Will I make it again? – I will surely make the classic version without the filo pastry. But I am glad I tried 😊 @the.chefs.world
