Parvathy Omanakuttan Instagram – People who know me will agree, that I need my food to look as appetizing as the taste. The key to that I have realised, is the accurate cut. 
The way each vegetable or meat is cut, determines the textural experience of the food we eat. Culinary school certainly taught me knife skills; but my Amma’s mastery over the knife, is what inspired me to explore the world of food. Till date she rarely uses the cutting board. From chopping raw papaya into tiny pieces, slicing cabbage into thin shreds, or scaling and skinning fish, my mum still does it all without the need to place it on a board. I have observed that, this is the way for most mothers and grandmothers in India.
The cutting board and chef’s knife was introduced to me by my father. He LOVES to show off his knife skills, and it is He who first taught me to cut vegetables into “julienne”.
Cooking a meal together, in our family kitchen is a chaotic calm . My father likes things the restaurant way, while my mum likes to work on the fly.
I think I have taken from both of them when it comes to food.
If there is a culinary term that my dad loves to throw around while in the kitchen, and one my mom absolutely cannot stand is “Mise en place” “MEEZ – AHN – PLAHS” . It  is also termed semige or semé da addae in Mangalore and Udupi respectively. In Karnataka, it is known as Otthu Sevigae where the preparation is a bit different. It is also a common breakfast item in Srilanka, Malaysia and Singapore where it is called String hoppers or Puttu Mayam, typically served with brown sugar and grated coconut.  Ingredients: (Serves 2)
