Even fish stock (actually called fish fumét), which has a much shorter cooking time, 20-30 minutes instead of hours, to keep the delicate flavors from getting dulled. It takes skill to get all that collagen and keep the flavor clean and stock clear so it gelatinizes and jiggles.

You’ve probably noticed I keep my freezer stocked with all kinds of stocks, partly because you never know when you’ll need it and partly because I’m cheap 😂 if I’m making dinner and have bones/scraps I cannot bring myself to throw them away, I paid for it so I might as well use it! Besides, practicing the basics keeps you sharp and you learn something new every time (if you’re paying attention). 👌🏽🤓
