Our Angel has ascended. Ms. Ruby Cheatham-Cannon was technically my Great Aunt but was more like a grandmother, and if you’ve read my cookbook you’ve seen her name on the dedication page. Big Sister (as we called her) lived to be 98 years old and had one hell of a life story to go along with it. It’s hard to sum up her joyful spirit, and the quiet strength she possessed, but I can tell you there was no one like her. We were so fortunate to have had her for as long as we did and last weekend my sister and I made the journey to Jackson, Mississippi to honor her among family. And of course we couldn’t leave town without stopping at Big John’s on Farish street to get some of her favorite sandwiches and hot tamales…iykyk Cheers to Big Sister, you are forever in our hearts. And thank you to my Top Chef fam @nickwallaceculinary for coming by to show your support and for the amazing food after church.

This has been an amazing summer, seriously one for the books… starting with a James Beard Nomination and selling out a very special dinner at Carnegie Hall. And this dinner @platformbyjbf was the perfect cherry on top! Spending time, creating, and sharing space with these women has given me life! During her residency, @mayacamillebroussard created an evening with @fariyalabdul and I to celebrate one another, and our shared love of food. To bring the evening full circle with #blackgirlmagic on all fronts, wine selections were made by the one and only @kells01 with generous support from @skurnikwines We laughed, cooked great food, and hyped each other up all night!! This was the start of something special and we all knew it immediately. One time for the women who support and push each other forward with love and friendship. Stock should always jiggle like jello (when it’s cold)! That’s how you know you got the good stuff. Even fish stock (actually called fish fumét), which has a much shorter cooking time, 20-30 minutes instead of hours, to keep the delicate flavors from getting dulled. It takes skill to get all that collagen and keep the flavor clean and stock clear so it gelatinizes and jiggles. You’ve probably noticed I keep my freezer stocked with all kinds of stocks, partly because you never know when you’ll need it and partly because I’m cheap 😂 if I’m making dinner and have bones/scraps I cannot bring myself to throw them away, I paid for it so I might as well use it! Besides, practicing the basics keeps you sharp and you learn something new every time (if you’re paying attention). 👌🏽🤓 P.S. when I did that little dance at the beginning I had not heard this song yet. Can’t believe I forgot to post this Shrimp Butter I made at the end of August! I blame work and travel for distracting me but luckily it was not lost! And it gives me an excuse to use this song again 🙌🏽 You already know I save my shrimp shells in the freezer and make Shrimp Stock (see previous reel) but here’s another use…Shrimp Butter! Compound butter is a great way to use leftover bits and makes it easy to add flavor. I stir my Shrimp Butter into soups, noodles, grits, slather it on fish and vegetables, or just spread it on the kick-ass sourdough my mom has been making since lockdown. Yesterday was indeed my birthday and thank you all for the messages, calls, well-wishes and love! (And the birthday care-package of flowers, fruit snacks, Champagne and other clutch items from my sister @jcheatham) Several people asked what I did so, lol, here it is… An hour on the stair climber followed by weights and core. All that exercise was nicely balanced out by an amazing night @surfclubrestaurant Thank you so much for the incredibly warm hospitality and amazing food. Not pictured: ALL the crudités, dips, deviled eggs, crudos, and Champagne to begin the evening, and the delicious Bucatini Pomodoro before this excellent short rib Wellington served with sauce Perigordine (one of my favorite of the French sauces). The team is truly outstanding all around. Special thank you to Uris for making this night so special, David from New Orleans for great wine, Chef Michael DeCicco, and Pastry Chef extraordinaire Odille Arias. And a most special thank you to my amazing husband for making sure I celebrate for several days!
