We have reimagined all baingan to be crispy, rolled and very sexy. I promise you it’ll elevate your dal chawal or khichdi to the next level. If you don’t have an air fryer you can bake or shallow fry also. Which sabzi should be the best superstar?

Aloo Baingan Re-imagined

Cut & slice 3 Eggplants
Add salt to a bowl of water
Soak the slices in it

1 tbsp Mustard oil
1/2 tsp Jeera
1/2 tsp Kalonji seeds
1/2 tsp Coriander seeds, crushed
1/2 tsp Saunf
Mix well
1 inch Ginger, chopped
1 Green chili, chopped
4 Potatoes, boiled
1 tsp Coriander powder
1 tsp Red chili powder
1/4 tsp Haldi powder
Salt to taste
Add a splash of water
& mix everything well
Mash everything well

Place the eggplant slices on a board
Add the potato filling
Spread it evenly
& roll the eggplant
Look at that 🤌🏻😮‍💨🤤

1/4 cup Cornflour
1/4 cup Maida
Salt to taste
Mix everything well
Add water as required
to make a smooth batter
Add the eggplant slices
Coat them well with
& then coat them in panko

Airfry at 170 degrees C
Till GBC 😮‍💨🔥

Serve them hot
with dal khichadi & kachumbar
