This past year after a hysterectomy, empty nesting, and a load of personal problems, the universe gifted me time to sit with my feelings and cry. Cry so much. Process. Grieve. And yes deal with depression. Along the way friends have picked me up, called me out, and carried me thru moments I may never share. And while I’m constantly working to process all that my body, heart, and mind have gone thru, I have to remember that at the end of it all. I’m just Claudia. A woman, and flawed individual doing her best to come out on the other side. Working on yourself is hard, but acting tough all the time gets you nowhere. So cheers to embracing your feminine. Cheers to loving yourself unconditionally, even when your own mind and voice are the loudest hater.

Claudia Sandoval Instagram - I have thought long and hard about what I wanted to post about today on International Women’s Day. While many of you know parts of my story many of you don’t know it all. At 31 years of age, I auditioned for MasterChef with less than $30 dollars in my bank account. Sharing a 1 bedroom apartment with my daughter and my sister because I had left a domestic violence situation a few years back and was finally getting on my feet. For many years I have chosen to keep it silent and private but as I look upon the long way ahead for women, it is worthwhile to look back to see how far you have come. On this day, I am proud of the woman I have become. The Woman who raised an incredible daughter all on her own (with the help of my village). A woman who cried, sacrificed, and risked it all to give us a better life. On this day I want to remind You woman. That at any age you can change your life. At any moment you can leave. At any time you can quit your job and start again. Your purpose is YOU. And if anyone can do it, a woman can. I see you. Especially those of you fighting for your lives day in and day out. Shrimp Peeled and Deveined 1 tsp kosher salt ¼ tsp pepper 6 corn tortillas   For the Slaw: 1 cup shredded red cabbage 1 cup shredded carrots ¼ cup red onions, julienned  ½ lime juice      Directions: For the Salsa Macha Verde: 1. In a heat proof bowl, combine peppers, Wonderful Pistachios Jalapeño Lime, garlic, and scallions until well mixed. 2. In a saucepan set over medium flame, heat vegetable oil until almost smoking and glossy. Immediately pour the oil over the Chile mixture carefully. Allow oil to cook chiles with heat. Mix to combine. Allow salsa to cool completely before seasoning. 3. Season salsa with kosher salt once cooled.   For the Slaw: 4. In a bowl combine cabbage, carrots, and onions and toss to combine. Season with lime juice and salt to taste.   For the Shrimp: 5. Season shrimp with salt and pepper to taste. Sear shrimp in a non-stick pan sertover medium low heat for 1-2 minutes on each side with 1-2 tbsp of oil .   To plate: 6. Warm up corn tortilla and place on desired plating 7. Serve shrimp topped with slaw and to with salsa macha verde.

In a heat proof bowl, combine peppers, Wonderful Pistachios Jalapeño Lime, garlic, and scallions until well mixed. 2. In a saucepan set over medium flame, heat vegetable oil until almost smoking and glossy. Immediately pour the oil over the Chile mixture carefully. Allow oil to cook chiles with heat. Mix to combine. Allow salsa to cool completely before seasoning. 3. Season salsa with kosher salt once cooled.   For the Slaw: 4. In a bowl combine cabbage, carrots, and onions and toss to combine. Season with lime juice and salt to taste.   For the Shrimp: 5. Season shrimp with salt and pepper to taste. Sear shrimp in a non-stick pan sertover medium low heat for 1-2 minutes on each side with 1-2 tbsp of oil .   To plate: 6. Warm up corn tortilla and place on desired plating 7.
