Merry Christmas! Made some smoked elk backstrap, duck fat roasted potatoes, and roasted broccoli for dinner. Could have lost a finger in the frenzy, so there wasn’t much time for presentation. Plus I’m like 3 weeks out so portions are in control. Reminiscing on that hunt in Alberta and selfishly loving the fact that my whole family loves elk more than anything in the world. I have to say I’ve been waiting for this one for a while and can’t wait to put it to use this fall.
