Laura Vitale Instagram – I probably make 10 different versions of sausage and peppers, some more labor intensive than others but if I had to say which is the one I make more often, I’d say this version because it comes together in about half an hour so perfect for busy days. I don’t measure this kind of stuff, sear some sausages (I cut mine into pieces) once seared remove to a plate then sauté a bunch of sliced peppers and onions, once they grab some color add garlic, cook a minute then add the sausage back in, basil, season well with salt and Pep, add a handful of pitted Kalamata olives, cook all together about 20 minutes. You can deglaze with some wine or stock if you’d like, or even a handful of tomatoes, whatever you have on hand! Serve on their own in nice crusty bread or with a side of starch and veg!
