Probably the thing I make the most in my every day life and I know it looks wildly simple (and it is and I don’t apologize for it) it’s so good, you’ll want to make it every single day for the rest of your life. It’s my go to salad to accompany anything, start any meal or mid meal (which I prefer) the magic that is the dill, shallots, capers and strong evoo is just other worldly. Make it, you’ll love it!

This sausage and spinach pasta in a luscious spicy cream sauce is one of the best dishes I’ve eaten all summer! It has it all, texture, balance and the creaminess is so good! You can sub mascarpone for the cream if you like or even ricotta! It’s so yum! Recipe below! 2 tbsp olive oil 8oz of sausage out of the casing (I did half sweet and half spicy) 2 shallots, sliced 3 cloves of garlic, minced Tap of Calabrian chilis or pinch of hot pepper flakes 4 tbsp of tomato paste About 1 cup of starchy cooking water Handful of washed baby spinach 1/2 cup of heavy cream Pinch of Italian seasoning Plenty of parm Salt and pepper to taste 12os of big rigatoni or paccheri

If you make anything this weekend (especially last minute) let it be this sensational peach cobbler! It’s simply the absolute BEST! Those of you that have been making it for years you always tell me it’s a summer staple for you and for good reason. It’s simple, yet the peaches shine, the batter is spongey and it’s a perfect partner to a good scoop of ice cream (if you dare to be extra naughty add a scoop of butter pecan to this and you’ll be in heaven) it’s out of this world! Recipe on my site (linked in bio) ❤️ Life changing tip from my nonna, to peel peaches, freeze them for about an hour then take them out, let them sit for like 15 min and you can peel them super easily! It works!
With temps as hot as they have been, ya gotta do what the Italians do and just make platters of sunkissed tomatoes and mozz, in this case we are doing a little dressing for the tomatoes and using burrata ( since I can’t get dreamy buffalo mozz when I’m home). Let me tell you, this, maybe a plate of good salami, soppressata or prosciutto, good crusty bread and a chilled glass of wine is truly perfect and can be lunch or dinner without much else. I rely on this so often throughout summer and make so many versions of it and always goes down so well. A must make! Buon appetito!
Simply scrumptious! These are great to make for a big crowd too, just assemble ahead of time, keep covered in the fridge and grill last minute. Such a fav in this house and a perfect “no recipe recipe” you can make with very little effort but everyone will LOVE! Surround a block of feta with tomatoes, shallots, garlic and a medley of olives, drizzle all with olive oil, pinch of oregano and bake at 425 for 25ish min, once out, drizzle with a tiny bit of honey (trust meeeeee) then serve immediately! You guys, I CANNOT!! You just must must must try it!
I suppose this would be the ultimate summer “no recipe-recipe” that is always sure to be a hit! An easy take on a caprese salad with a bruschetta vibe, sensational and so easy! Would also make for a great meal prep if you’re into that kind of thing 🥰 no recipe for this yall, I just eye ball it as I go. A little whole grain mustard on the chicken really makes it so tasty!
If you know me you know I’ve got spuds running through my DNA. I’ve never tried a potato I didn’t like but let me tell you, these intensely lemony roasted potatoes are at the very top of the favorite list and they go well with any main dish from roast beef to grilled fish. Come to the garden with me this morning! Lots of peppers of different varieties, some I’ll pickle, some I’ll pickle then stuff and marinate (I’ll share all that with you don’t worry!) some I’ll sauté. Eggplant is coming in, we picked about 8 a couple days ago and fresh batch will be ready to pick in a day or two. Lotsssss (and I do mean lots) of blackberries that I’ll likely turn into jam (again, I will share it all ) and then into a crostata, and a handful of tomatoes because my mint went absolutely insane and pretty much strangled all my tomato plants 🫤. Strawberries are done for the year as well as zucchini, yellow squash and cucumbers but Joe planted another crop, will see if they come up at the end of summer/early fall. We have great plans on expanding and re designing our garden for next year, I can’t wait to share it with you! But for now, just come hang with me ❤️
You guys, these shrimp and zucchini skewers (you can use any veg here you like) with this lemony, dilly/wanna be tzatziki sauce is honestly what summer night dreams are made of! I roughly estimated the ingredients because it’s all very customizable! You must give these a try, you won’t regret it!
The produce stand did NOT disappoint with these absolutely beautiful tomatoes. I knew I wanted to literally just slice and serve with barely anything done to them at all, but I wanted to give them like a *kiss* of tomato onion salad vibes but like all tomatoes, barely any onion (and very thinly sliced) drizzled with strong evoo , a touch of vinegar, sea salt and to offset the sweetness of the tomatoes, some Castelvetrano olives. You guys, 10/10!! Must make!
So unbelievably easy and sooooooo delicious!!!!! For the dressing I used the following:
1/2 cup Greek yogurt
1/4 cup dill (loosely packed)
1/4 cup of Parsley (loosely packed)
Clove of garlic
Juice of 1 lemon
2tbsp of Extra Virgin olive oil
Salt to taste
Veggies used:
1/2 bunch of asparagus
Handful of sugar snaps
Radishes
Scallions
Baby green and red leaf lettuce
Dill and parsley
Extra virgin olive oil
Lemon juice
Parsley
Pickled jalapeños are so easy and so yum! This is my go brine, it’s so fantastic and perfectly balanced. I tripled the recipe but down below you’ll see the measurements for exactly 1 pint jars. Hope you make them! Note: I don’t do this with other peppers, I haven’t experimented so not sure how they will turn out if you substitute given that all peppers are different in texture they might not turn out quite right. 10 jalapeños sliced 3 cloves of garlic, sliced 1 cup of water 1 cup of distilled white vinegar 3 tbsp of sugar 1 tbsp of coarse kosher salt
Homemade pepper shooters might very well the best thing on your antipasto platter. So unbelievably good and easy!! Really best if you use small cherry peppers or small bell peppers (I’d do green so they aren’t sweet). Once you clean them you’ll add them to some boiling brine (1 cup of water, 1 cups of distilled white vinegar, 3tbsp of sugar and 1 tbsp of salt) remove from the heat and let them sit in that hot brine for 10 minutes before draining and letting them cool. I roll some cheese (usually provolone but mozz works great too ) on some finely chopped garlic and parsley; wrap a cube in some salami or prosciutto and stuff in the cooled pepper. Place in a container (make sure they are nicely and tight in there) and cover them with extra light olive oil or safflower oil along with a splash or two of red wine vinegar. Cover and refrigerate a minimum of 24 hours or up to a week! If using olive oil you know it will solidify when refrigerated so take them out about 10 minutes before you serve so it can liquify . So good!!!
I probably make 10 different versions of sausage and peppers, some more labor intensive than others but if I had to say which is the one I make more often, I’d say this version because it comes together in about half an hour so perfect for busy days. I don’t measure this kind of stuff, sear some sausages (I cut mine into pieces) once seared remove to a plate then sauté a bunch of sliced peppers and onions, once they grab some color add garlic, cook a minute then add the sausage back in, basil, season well with salt and Pep, add a handful of pitted Kalamata olives, cook all together about 20 minutes. You can deglaze with some wine or stock if you’d like, or even a handful of tomatoes, whatever you have on hand! Serve on their own in nice crusty bread or with a side of starch and veg! Leftovers make for sensational sammies!
