Laura Vitale Instagram – This sausage and spinach pasta in a luscious spicy cream sauce is one of the best dishes I’ve eaten all summer! It has it all, texture, balance and the creaminess is so good! You can sub mascarpone for the cream if you like or even ricotta! It’s so yum! Recipe below!
2 tbsp olive oil
8oz of sausage out of the casing (I did half sweet and half spicy)
2 shallots, sliced
3 cloves of garlic, minced
Tap of Calabrian chilis or pinch of hot pepper flakes
4 tbsp of tomato paste
About 1 cup of starchy cooking water
Handful of washed baby spinach
1/2 cup of heavy cream
Pinch of Italian seasoning
Plenty of parm
Salt and pepper to taste
