By popular vote here is my Grampy’s favorite pimento cheese recipe to help me use up some of the cheddar cheese from yesterday’s taste test. Can’t wait for you to try it! Grampy’s Favorite Pimento Cheese Ingredients: 8 ounces sharp cheddar cheese, shredded 1/2 cup mayonnaise 1/4 cup roasted red peppers or pimentos, chopped 1/4 teaspoon garlic powder salt black pepper Instructions: In a medium bowl, combine the shredded cheddar cheese, mayonnaise, chopped roasted red peppers or pimentos, garlic powder, and 1/2 teaspoon black pepper. Mix well until all ingredients are thoroughly combined and the mixture is creamy. Taste and adjust the salt and pepper if needed. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled with crackers, bread, or fresh vegetables. Enjoy your pimento cheese! #pimentocheese

Patrick’s Quiche Ingredients: 1 – 1 1/2 cup julienned leeks 12 ounces cooked bacon, chopped 1 ½ cups grated Gruyère cheese 5 whole eggs 1 cup heavy cream Salt and pepper, to taste 1 store-bought deep dish pie crust Instructions: Preheat your oven to 350°F (175°C). Place the pie crust in a pie dish and pre-bake it for 10 minutes until it’s just beginning to set but not browned. Lower the oven temperature to 325. In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined. Start assembling the quiche by layering half of the julienned leeks, cooked bacon, and Gruyère cheese in the pre-baked pie crust. Pour half of the egg custard mixture over the layered ingredients. Repeat the layers with the remaining leeks, bacon, and cheese. Pour the remaining custard over the top. Sprinkle a little extra Gruyère cheese over the top for a golden finish. Place the quiche in the preheated oven and bake for 45-60 minutes, or until the top is a dark golden brown and the center is set but still slightly jiggly. Let the quiche cool for at least 30 minutes before slicing. Enjoy warm or at room temperature.

I use tomato juice all through the work the winter to make soups, cook grits, rice or pasta in. I use it in doughs and batters to replace some of the water. It’s a very fast and easy way to preserve the summer tomato flavor to help get me through those cold winter months! How would you use it???
