Honestly has been the worst way to spend the final week of school holidays… so I thought I would re-share this banana muffin recipe Arna made with her Yiayia last holidays, for anyone who is feeling well enough and is looking for something to do with their kids 🤣
They were soooo good that we ate them all within a day!!
Ingredients:
1½ cups mashed ripe banana (about 4 bananas)
½ cup (125ml) light-flavoured extra virgin olive oil
3 eggs
1/4 cup brown sugar
1 teaspoon vanilla extract
1½ cups (225g) self-raising flour
1 teaspoon ground cinnamon
1 banana, extra, halved lengthways
Method:
Step 1: Place the mashed banana in a large bowl. Add the oil, eggs, sugar and vanilla and mix to combine.
Step 2: Add the flour and cinnamon and mix until just combine.
Step 3: Preheat oven to 180°C (350°F)
Step 4: Lightly grease a 10cm x 20cm (2 litre-capacity) loaf tin and line with non-stick baking paper (or use muffin trays like we did!)
Step 5: Pour the banana mixture into the tin and top with the extra banana, cut side up
Step 6: Bake for 1 hour or until cooked when tested with a skewer. Allow to cool in the tin for 5 minutes before placing onto a wire rack to cool completely. Slice to serve.
Serves 8-10
So good and so easy!!
