Manicotti are a much-loved baked pasta in our family, but in this case I use crespelle instead of fresh pasta to envelop the ricotta stuffing, resulting in a deliciously lighter version. Crespelle, Italian crêpes, are one of the most versatile recipes in the kitchen. You can use them shredded in soups, layered in lasagna, stuffed and rolled in manicotti, as I do here, or baked with vegetables and pesto – and if you add some sugar to the batter, you can make endless forms of dessert with them. I like to make a big batch of crespelle—once you get going, they are done in no time, and you can freeze or refrigerate the extras. Link to full video and recipe on my bio. Zucchini is such a convenient and delicious vegetable. It is inexpensive, and you can find it year-round, although it is best in the summer. In this delicious and simple recipe, the zucchini is baked into a parmigiana but does not have the traditional frying step. I like using a large baking pan and making just one layer; this way, the zucchini will dry up more in the oven, and you will have more of the crispy cheese top, which everybody loves. It’s grilling season!! I love this dish – I had swordfish prepared this way for the first time at an outdoor grigliata near the sea in Trapani, Sicily and I was hooked. Simple and delicious – Swordfish is marvelous this way, but you can also substitute other firm fish, such as tuna or grouper; just be mindful each fish has a different cooking time.
