Adrienne Cheatham Instagram – Ingredient Spotlight!! People sometimes send me pictures of things they’re not familiar with and ask me how to prepare them, so I figured why not do a series on some of these delicious, but less-common items?!
First up: Fresh Chickpeas/Green Garbanzo beans. These are chickpeas that are harvested while unripe/immature.
Season: Spring (no idea why they were at the market, I’ve never seen them this time of year)
Origin: Modern-day Syria and Turkey
Not as common in the US, but popular in Middle-Eastern and Indian cuisine
Taste: Slightly sweet; like a cross between chickpea/green pea with a note of sunflower seed nuttiness.
You can steam them or roast them, but I like to toss them in a hot pan with salt, Worcestershire sauce and Tabasco Vinegar. It’s like a subtly sweet salt & vinegar edamame (but more delicious than edamame). You can also shell them and cook the legume without the pod, but I kinda like eating them like this!
