What an incredible adventure to such a stunning part of the world: Swedish Lapland with @volvocarsie💙 ❄️ 💙, and thus why my kids can literally never find out. Santa is still Out of Office as he’s obvs still wrecked but we did spot Blitzen or Donner (scroll to the end!) – and not a Donner Kebab because that would have been a dark twist in a v scary Scandi Noir 🦌 A massive thank you to @volvocars.ie for taking us to the edge of the Artic Circle and encouraging me to drive the Volvo EX90 on a frozen lake 🥶 (no, no thank you honestly!) And I thought me and my problematic “reversing around a corner” days were behind me. But I can safely say driving on frozen lakes and not thinking about falling through the ice is absolutely cuter than parallel parking. We even got to do our own ice sculptures and I really wanted to take it home but I wasn’t sure it would travel well, or indeed technically exceed the liquid Mls limit for airport security. My only gripe was someone forgot to put on the immersion for our Artic plunge. (Yes, that is a hole 🕳️ cut into a literal frozen lake where you get in and wash behind your ears). But at least when you get out it’s a balmy -17 degrees which is lovely. The fact that the Baltic Sea is frozen during the winter and people drive across it to get to the little islands will forever and ever and ever blow my mind. Amen. I feel like I can also never again complain it’s cold under say, 10 degrees. And I never know what to pack for a few days away but I will say I’m glad I didn’t bring the strappy high heels and the bandeau dress. Happy Nollaig na mBan to you all ❤️ I had saved my one final slice of Christmas pudding to put it in the freezer for my birthday because I love it so much, but then I thought why freeze joy for another day when we can fry it in butter, pour cream on it and enjoy it today? Sort of like life I suppose. I don’t normally fry it in butter but some of you guys here told me you do it all the time so I had to give it a go and my verdict is….. you are not insane! However, one of you told me you fry it with an egg and sausages and black pudding on Stephen’s Day which made me do exhibit B in picture 2 and I’m not sure you are okay? You okay hun? Okay yes so a few qwezzies about the cottage pie which is absolutely fair seeing as I added half a pot of Greek yogurt to it out of nowhere because some person on the internet told me to (well to be fair it was a chef on a cooking website.) And if some chef on a cooking website told you to jump off a cliff with a pot of Greek yogurt for the cottage pie would you? Yes! Yes I would! It was quite a scary moment but with some guided breathing and a “can do” attitude I plonked that yogurt right in there. My taste tester feedback is I might actually add MORE next time (I know, I know, don’t be too needy with the yogurt, you’re only getting to know each other etc etc…) The other thing some of you guys asked me was how I did the potatoes which made me beam with pride until I remembered it wasn’t from some innate culinary wisdom but rather me literally reading instructions like I was assembling a Hot Wheels car tower for one of the kids (Christmas Day flashback, I’m fine.) Anywho, those spuds were peeled, sliced and popped in a pot to boil and then simmer away to themselves like any one of us with a little grudge. Ten mins later they were drained and then arranged atop the Rachel Greene thanksgiving trifle. So the recipe is just the mints, oh sorry mince, onions, carrots, peas, tin of chopped tomatoes, seasoning, stock, Greek yoghurt, spuds, cheese. And scene. If anyone has any other delightful tips or ingredients we all need to know about asap do tell us as soon as absolutely possible! 🙌
