I’m obsessed with this. 🥩🍟 Homemade fries always taste SO much better in my opinion, and I’ve mastered a quick and easy bernaise sauce that’s quite literally INSANE😍 I can’t lie, this was one of the best dinners I think I’ve ever made 🥹😭 For the bernaise sauce, I made an infused vinegar first with 60ml white wine 60ml white wine vinegar Tsp tarragon 1 small white onion or shallot boil that down on high until it starts to reduce, you want there to be about 1 -2 TBSP liquid left. Then strain it and you have the vinegar! Mix (I used a bamix blender) with 3 egg yolks, lemon juice, salt, pepper, and then slowly stream in 120g melted butter. Mix in some more tarragon and then pop in the fridge! You can make this in advance, it’s soooo easy!!!! The fries are cooked twice, once with the oil on 140 degrees for about 3-5 min, and then again with the oil on about 170 degrees until golden brown. I’ll link my thermometer as well as other bits on my Amazon storefront, as everything in this video is from Amazon ✨ The trick with the fries to get them super crispy is to pop them in ice water for 20 min before cooking. It helps release the starch!! ❤️

I did it!! I finally did it! After several attempts, I’m so happy with how my beef wellington came out. It’s one of my all time favourite meals, so I wanted to get it spot on🥰 I had to keep in my reaction after that first slice 😂 thank you guys for all your fab tips… they helped so so much! I have linked the items used on my Amazon Storefront 🥰 1. ensure you chill for around an hour between steps. I know this is time consuming but it means that it won’t fall apart! I chilled after the ham layer and then after the pastry layer too. 2. roll until it’s very very tight in the cling film. I think I was nervous before about rolling too tight, but the tighter the better!!! I even did 2 layers. 3. cook the duxelle down for as long as you can, on a medium high heat. I also patted down with some kitchen roll to get rid of any excess moisture. 4. I cooked on a pizza pan to ensure the base went crispy. Someone recommended this to me!! 5. sear the meat properly… this is something I haven’t done as well before and I think that’s what’s caused issues with soggy pastry. (I hate the word soggy😂). I used 600g fillet of beef which was perfect for 4 of us, with some left over too which my dad polished off 😂🥰🤣 I could have cooked it for slightly longer maybe- I did 26 minutes on 190. But we don’t mind it rare so that’s fine… but I would increase that if you want a bit more medium rare / medium. I used 400g of mushrooms for the duxelle just chopped finely with some garlic and thyme. I also used ready rolled puff pastry! For the gravy I fried off 3 diced shallots, thyme, garlic and a bay leaf. I added 600ml red wine, boiled until reduced into a syrup and then added 600ml beef stock, and thickened up ❤️

I literally had the best day ever🥺🥹❤️ I came out of there wanting to give every single cat a home. 🥺 it breaks my heart that some of these cats have been abandoned and dumped. I know you can never know what someone circumstances might be to lead them to take that decision, it’s still incredibly sad to think of these babies being so scared, vulnerable and alone. I’ve said this since I was about 12 but when I’m older and retired I’m going to buy a house in the countryside with a gigantic garden so I can rescue all the cats that I possibly can😂🥹🩷 I’m going to post some stories with details about how you can find out more about the cats in my video today and many more. A look back over my 2024. ❤️ I am incredibly grateful for everything 2024 brought to me. I am also really proud of myself for what I have achieved… 🥺🩷 My first two creator credits on my documentaries, two new shows commissioned (!!!). I carried on my work in the violence against women space, and have been working on my documentary about stalking since the start of 2024 with my incredible team. I also started presenting my own segments on Morning Live, which is a huge dream come true. Hugely, I started my own business that launched into both F&F at Tesco and New Look in the first year. I became an ambassador for my two favourite brands, L’Oreal Paris & Sol De Janeiro. I was on the London Underground on huge billboards TWICE! And one of those times I got to share it with my Mumma 🥺😭🥹 I got to take my Mummy to Buckingham Palace, and experience the magic of that alongside the woman who made me who I am today. I love you mummy!!!🩷 We went on some beautiful holidays to Ibiza and Dubai ✈️ and I got to take my baby goddaughter on our first holiday together with my best friend!!! What a year. Here’s to 2025 🥺🩷🥹❤️

I made a film about Stalking with Morning Live last week to discuss the new government measures that aim to give stalking victims more protection. They include measures designed to add layers of protection to those being stalked online anonymously. This is a huge issue, and one I am exploring as part of my bigger project for BBC3 which comes out this spring. However, it’s interesting to note that victims actually haven’t previously had a right to know who their stalker is, even if the police did. The new measures aim to empower police to release the stalkers identity to the victim at the earliest opportunity. Stalking is a crime that can escalate quickly, from the online realms into the physical one. I was grateful to be able to meet the incredibly inspirational and brave Zoe as part of this special, to hear about her horrific experience with her stalker.
