Emelie Forsberg Instagram – I have always been an advocate for eating holistic when it comes to season, production and environmental impact, and I think it’s important to know where and how food is produced. Nowadays big non organic farming is so destructive to the land.
I believe nutrition is an important part of an athlete’s wellbeing and correlated with performance. But what I have experienced more and more during pregnancies is that I react even more to food that is not nourishing. When the energy output is big, you can get away with eating less nutrition dense food, because you need so much energy to meet the demands ( as long as you get the nutrients that you need in the big picture) but with little energy output, what I put in matters more.
To cook food takes time, energy and creativity, and most times I prioritise this, but I have also experienced being very tired so cooking have been neglected. When I then had energy I made sure to prepp for the times when not.
To make it easier to eat nourishing meals my go to have been:
Big batches of bean and veggie chilis/ currys
Frozen veggies- just to boil
Different beans and lentils preboiled but in the freezer
Bean burgers
Different Sauces and hummus to spice up meals
Preparing big boxes of sallads to keep in the fridge for some days
Smoothies with berries and proteinpowder
Sourdough bread
Nutbutters
Big jar of overnight oats
