Little messy but oh-so-yummy, Eggarama salad!
Creamy Cucumber Egg Salad
Ingredients:
* 2 cucumber diced
* 3 -4 boiled eggs
* 1/2 red onion diced
* 1/2 cup corn (can)
* Some green onions (diced)
* Parsley (optional)
Dressing:
* 3/4 cup Greek yogurt
* 2 tbsp mayo
* 1 1/2 Tbsp grainy mustard (you can use Dijon too)
* 1 Tbsp honey
* 1 garlic clove minced
* Juice of 1/2 lemon
* salt/Pepper to taste
* chili flakes, spice it up!
