You have got to give this Chicken Katsu Curry a go! My word it is absolutely delicious and the perfect alternative to an unhealthy, expensive takeaway! It is super simple, fun to cook and tastes phenomenal! 🤤💚 Ingredients: (Serves 2) ⦿ 1 tbsp Light Soy Sauce ⦿ 1 tbsp Grated Ginger ⦿ 1 Clove Garlic (grated) ⦿ 1 tbsp Medium Curry Powder ⦿ 1 tbsp Honey ⦿ 1 tbsp Cornflour (mixed with a splash of water) ⦿ 50g Plain Flour ⦿ 1 Small Onion (chopped) ⦿ 150g Panko Breadcrumbs ⦿ 2 Eggs (beaten) ⦿ 1 pint Chicken Stock ⦿ 2 Chicken Breasts (lightly flattened/bashed with a rolling pin) ⦿ 1 cup Brown Rice (to serve) Method: 1. Pre-heat the oven to 190ºC 2. Coat your chicken in flour, egg and breadcrumbs before placing on an oiled oven tray and cook for 25 mins 3. While the chicken is cooking, add oil to a pan and let heat before adding onions and softening for a few mins 4. Add garlic and ginger to pan – stir and cook for a minute 5. Add curry powder to pan, stir and cook our for about 30 seconds 6. Add chicken stock to pan and let it heat through for a few mins 7. Add soy sauce and honey to pan and stir before adding cornflour and stirring again – let it cook for a couple of mins TIP: If you find the sauce is not thick enough then add more cornflour and a splash of water and cook for a couple more mins 8. Once the sauce is the consistency of gravy, it is ready to serve with the chicken 9. Who else is a sweet tooth?! Sweet and sour sauce is one of my favourites and so I had to find one that wasn’t full of sugar but was still delicious! Save this one for next time you fancy a takeaway but don’t want to be unhealthy! Ingredients (Serves 1): * 100g Chopped Pineapple🍍 * 1 tbsp Soy Sauce * 1 tsp Grated Ginger🫚 * 1 tbsp Olive oil * 230ml Pineapple Juice * 1 tsp Garlic granules * 1 tbsp 🍯 * 2 Peppers (chopped)🫑 * 400g Passata * 3 Spring onions (chopped) * Serve with Prawns or Chicken Method: 1. Add oil and ginger, garlic granules, spring onion and pepper to pan, stir and cook for about 5 mins 2. Add passata, soy sauce, honey and pineapple juice to pan, stir and let thicken 3. It’s so easy… let me show you! ⬇️ Ingredients (serves 1): ▪️1 wholemeal English muffin ▪️1 tbsp olive oil ▪️2 Heck Chicken Italia Sausages ▪️1 egg ▪️1 handful of spinach ▪️4 cherry tomatoes (sliced) Method: 1. Cut your muffin in half and pop it in the toaster 2. Add oil to a pan and let it heat – when the oil heats up add your sausages to the pan and let them begin to cook 3. While the sausages are cooking break your egg into the pan and let it cook 4. While your sausages and egg are cooking, cut your tomatoes in half and wilt down your spinach 5. Cut your sausages in half, length ways 6. These prawn tacos with pineapple salsa is to die for! It is so delicious and so filling and soooo much healthier than that takeaway you were going to order! Save your money and make these instead – prepped in 10 mins and absolutely not cooking 😱 Ingredients: Serves 1 (Makes 3 tacos) ▪️200g tinned of pineapple chunks ▪️1 tsp crushed chilli ▪️1/2 red onion (diced) ▪️1/2 teaspoon garlic powder ▪️Handful of coriander (chopped) ▪️Juice of 1/2 a lemon ▪️150g cooked prawns ▪️Olive oil ▪️Pinch of Paprika ▪️Sour cream ▪️3 taco shells ▪️Handful of rocket to make a side salad Method: 1. Pre-heat the oven according to the instructions on your taco shell packet – cook these per instructions on packet 2. Put your onion, coriander, pineapple, chilli and garlic powder into a bowl and mix together 3.
