Ours is a wholesome and nutritious black rice dosa, fermented overnight, served with homemade butter, jaggery coconut chutney and gunpowder. ⚓Right from pre-historic times the south of India has had many cultural and culinary exchanges with South East Asia through trade.
🍜Not just food & ingredients, but the exchange of ideas, cooking techniques and utensils also took place. This exchange is reflected in language where similar words for relating dishes/ingredients are used across these countries.
🌿One example is that of the Pandan leaf. Around the town of Kayalpattinam, Pandan, known as Rampe is cooked with in many dishes.
