Arsenic is a naturally occurring substance that can be found in the air, water and soil. The toxic substance can be found in small amounts in many foods, but the crop with the highest amount of inorganic arsenic is rice. The EPA classifies inorganic arsenic as a “human carcinogen” with links to cancer, cardiovascular disease, respiratory issues, and cognitive conditions. One quick way to lower your exposure: parboil your rice (partially boil your rice): – Add 1-2 cups of uncooked rice to water and boil it for five minutes. – Remove the pot and use a strainer to discard the arsenic water. – Return rice to the pot or add to a rice cooker and add fresh water. Most of you guys know me as a former meteorologist and reporter at a local tv station in Los Angeles. What you may not know is that I have always been passionate about health and wellness. It started when I was 20 years old, after my pau pau (grandmother) was diagnosed with ovarian cancer. It broke my heart to see her suffer and witnessing her struggle sent me down a path of research. After watching her cry at one of her chemo sessions, I wanted to find out what I could do to help, what caused the disease and what I could do to prevent it from happening to me in the future. Everything I read circled back to prevention. Her sickness was the catalyst for me to make a deep commitment in my personal health. It also motivated me to obtain a Master’s Degree in Public Health, become a certified yoga teacher, and it influenced me to become a certified Functional Medicine Health Coach (I’ll graduate in August, 2024!). I love functional medicine because practitioners focus on finding the root cause of disease instead of just treating the symptoms. They give their patient’s a lifestyle prescription to help them heal and many times, making these lifestyle changes can reverse disease. A coach supports their client and helps them co-create a plan so they can reach their health goal. Coaches are masters at behavior change and shifting peoples mindsets. While I am not planning on taking on any clients, I do plan to share what I learn on this account. So if you care about your mental, physical, emotional, and/or spiritual health, you’ll probably find some tips on this feed to help you feel and look your best. Make sure you soak your legumes (e.g. lentils and beans) before cooking them! It will help with digestion, plus help you absorb minerals like iron and zinc. Beans and lentils are notoriously difficult to digest because they contain compounds that the human body cannot fully digest. Soaking legumes (and changing out the water several times) can reduce some of the gas-producing carbohydrates and lectins. Also, the more often you eat legumes, the more your body will adjust and in turn, produce less gas. A couple of other things you can do to make beans more digestible: sprout them and/or use spices like ginger, cumin and turmeric. Also, as an added benefit, soaking your legumes reduces the amount of phytic acid which blocks the body from absorbing minerals like iron and zinc. RECIPE ⬇️ No Bake Chocolate Strawberry Cups Ingredients: Bottom Layer – 3/4 cup sunflower seeds – 10-12 dates (approx 1/2 cup) – 2 tbs unsweetened cocoa powder Middle Layer – 1 cup chopped strawberries – 2 tbsp chia seeds – Dash of stevia or 1 tbsp maple syrup Top Layer – 1/2 cup melted chocolate (I used vegan chocolate chips from @enjoylifefoods ) Method: Bottom Layer: Use a food processor and mix all the ingredients together until desired consistency is formed. Divide into small balls and press down into cupcake tray (use a silicone tray – unlike me 🙊 – because it will make it much easier remove once they’re set. Middle Layer: Chop strawberries and mash with a potato masher. Add chia seeds and maple syrup or another sweetener like stevia. Let that sit so it becomes slightly thick (about 15-20 minutes). Add 1/2 – 1 tbsp of the strawberry mash to the bottom layer and place in fridge so strawberry layer can set. Top Layer: Melt chocolate in microwave or on the stove in a double boiler. Add to the top of the strawberry jam and place in freezer for about 10-15 minutes. Remove from the mould (again, use a silicone mold so they can pop right out…don’t make my mistake and use a regular cupcake tray 😉 Let these sit for about 10 minutes before enjoying them so they can thaw. #chocolatestrawberries #healthydesserts #nobakedessert #strawberriesandchocolate #sweetsnack #vegan

RECIPE ⬇️ Quick and Easy Tofu Vegetable Coconut Curry Ingredients * 2 tablespoons avocado oil (or any neutral oil) * 1 large onion diced * 1-2 Tbsp Minced garlic * 1 tsp of ginger grated * 3 tsp of curry powder * 1 tsp of turmeric * 1 tsp of salt * 2 cans of coconut milk (full fat) * 1 cup of veggie broth (I added bouillon and water instead) * Purple potatoes cut into bite sizes * Celery * Tomatoes * Broccoli crowns * Carrots * Chickpeas * 1 block firm tofu cut into bite sized cubes (you could also add an animal protein instead if you prefer) Instructions * Heat oil in a large pan, then add the chopped onion, garlic, and ginger * Once it becomes fragrant, add the carrots, celery, and potatoes. * Then add the full fat coconut milk and veggie broth (I added some water and bouillon because I was out of veggie broth) and all the spices. I also added some honey to make it slightly sweet. * When everything begins to soften, add the broccoli, tofu, and chickpeas * When the veggies are soft, turn off heat. RECIPE ⬇️ EASTER TRUFFLE BUNNIES Thank you @desserts_1st for teaching me how to make these! Ingredients: – 3/4 cup sunflower seeds – 10-12 dates (approx 1/2 cup) – 2 tbs unsweetened cocoa powder – White Chocolate – Marshmallows (I used vegan ones by Dandies) – Granulated Sugar (I used monk fruit sugar which has 0 calories and just as sweet as regular sugar) – Plant-based food coloring by @Chefmaster – Black Edible Marker Method: 1. Add the dates, sunflower seeds and cocoa powder to a food processor and mix. 2. Use an ice cream scooper to help create the truffle balls. Place the balls on a plate and transfer to the freezer for about 15-20 min. 3. Melt the white chocolate in the microwave or double boiler. 4. Remove the truffle balls from the freezer and cover with chocolate and place on parchment paper so they can set (takes about 5 minutes). For the pink sugar and chocolate: only a couple drops of the red food coloring is needed to create a pretty shade of pink. For the marshmallows: cut the marshmallows diagonally for the bunny ears.
